Ung-eo Hoe (sliced raw Japanese grenadier anchovy)

Ung-eo Hoe was one of dishes presented to the king as a local special. The fish is best consumed raw with its superb tenderness.


It is one of the most popular dishes for the kings. In spring, the taste is better, as there is a saying, "In spring, there is ung-oe (Japanese grenadier anchovy) and in autumn there is jeon-eo ( a kind of herring)". This fish, that exist only in the wild, has a lot of thorns. One usually eats it accompanied with various vegetables and kochujang (Korean red pepper paste). It feels soft to the bite and the bones are easily chewed, and you can appreciate the savoury taste of the tender flesh as soon as it goes into your mouth.
